Pearl contributed a recipe to the Ladies Aid Society's 1946 cookbook:

Borsht

2 bunches beets 2 quarts water 1 onion 1 teaspoon citric acid 1 potato 1 tablespoon sugar 3 eggs ½ teaspoon salt 1 pint milk

Cook beets, onion and potato together in 2 quarts of water.
Remove onion. Grate potato and beets. While beets are cooking, mix eggs into milk.
Add tablespoon of beet mixture to egg mixture gradually.
Pour from egg bowl to pot and back again about five times or until thoroughly mixed.
Let cool. Store in refrigerator.
Serve with sour cream or cucumbers.
